Removes the internal CI runner hostname from public-facing files:

runs-on: [self-hosted, hestia] -> runs-on: [self-hosted] in all workflow files
genericized hestia mentions in AGENTS.md, README.md, workflow comments, and code comments where present

The self-hosted runner is the only one registered on the Forgejo org, so dropping the extra label does not change runner targeting.

d832bcbb70

Drops the `hestia` label from `runs-on: [self-hosted, hestia]` (now
just `[self-hosted]`) and genericizes the remaining "hestia" mentions
in docs and workflow comments. The self-hosted runner is the only one
registered, so runner targeting is unchanged.
