Rest of BUG-1. Stacked on #7. Compose now mounts /srv/breadbug-symbols read-only at /data/symbols (the symbol store written by the release pipelines) and passes the optional breadboard URL and token-file settings; README gains the step-by-step deployment checklist (DNS, infra Caddy PR, env, compose, admin access over Tailscale only, test send). Nothing is deployed.
